Allergen Risks in EESys 

Food products may contain Allergens, or contain ingredients which have some allergen risk. In these cases the handling of the product needs to be specially controlled.
EESys includes systems to identify certain ingredients as having distinct levels of Allergen risk. This allows the allergen risk of composite products which contain multiple ingredients to be computed by the system.
These allergen risks are used in many ways including the timing of different production runs in the factory to minimize risk of cross-contamination of allergens.

Where to record AllergenRisks in EESys

EESys includes a BusinessObject called "AllergenRisks", this contains records listing individual risks (such as "Shellfish and Crustaceans", "Gluten" etc.) The legal framework for allergens changes a lot over time, so Users can add new Allergen Risks at any time if new allergens or other forms of "risk" need to be linked to a product.

Individual AllergenRisk records. Note that the "EUDesignated" tick-box can be used for allergens which the EU has decided must be indicated for all products.

Once all the Allergen Risks that are needed are present in the database, these can be linked to Products, via the AllergenRiskItems child-data-table.

If a Product includes an allergen risks, add records to this table, linked to that product until all risk-items are present.

The AllergenRiskItems view-grid shows all the allergens linked to the product.

Note the need for "EU Designated" allergens to appear as "Does not contain", for other allergens, no appearance on the list implies that the allergen is not present at any level.

Once this is done, these Allergens will be returned in any reports that need to show allergens for a product.

Rapid Entry of AllergenRiskItems

At present there are 52 Allergen Risks. Adding all these individually to multiple food-product records is very time-consuming. To speed up the process a rapid entry system has been added to EESys. To use this, start by accessing the Product Specifications tool-button as shown below.

In any Product

  1. Click on the "Product Specifications" toolbutton in the Product's record.
  2. Select "Show Allergens Rapid Entry Form" from the menu.

The Allergens Rapid Entry Form will open.

  1. Click in the vertical boxes to select the level of allergen that will be reported.
    Levels include:
     * Present in Product
     * Handled on Same Production Line
     * Handled on adjacent Production Line
     * Stored in same warehouse 
     * Does not contain 
  2. Once you have made the selection for all the needed allergen-risks, click the "Post" button to add records to the database.

As well as the multi-purpose AllergenRisks entity historic, essential Allergens are stored in their own data-table, as shown in the image above:

  1. Find data for any Product.
  2. Go ot the NutritionalDetails tab.
  3. Find the "Allergens" tab.
  4. Details of allergen levels for Milk, Gluten, Nuts, Sesame, Soybeans and SO2 are all stored here.
